Zucchini Brownies



In this video Liz from Night Owl Crafts Australia demonstrates how to make Zucchini Brownies.
Ingredients list:
1 1/4 cup brown sugar
1/2 cup olive oil
2 eggs
1 teaspoon vanilla bean paste
2 cups grated zucchini (don’t squeeze out moisture)
2 cups Self Raising Flour
1/2 cup cacao powder
Pinch salt
2/3 cup chopped walnuts
100 gram (3.5 oz) chocolate chips

Method
Combine and bake at 180C (160C fan forced) for 20 – 25 minutes.
Cool in the tin then cut into squares

For Blondies – omit cacao powder and choc chips and add 1/2 cup extra SR flour.
Skin zucchini to avoid green flecks in the Blondie, or leave it on for interest.
