INGREDIENTS
* 1 x Avocado
* 2 x Eggs, medium
* 150g Runny Honey
* 1 tsp Vanilla Extract
* 75g Self-raising Flour
* 30g Unsweetened Cocoa Powder
* 1 Tsp Baking Powder
* 50g No Sugar Added Chocolate Chips
METHOD
* Preheat the oven to 180C/ 350F
* Cut the avocado in half and remove the seed
* Scoop out the avocado and add to a food processer, with the eggs, honey and vanilla extract
* Blend the ingredients until they are a smooth mixture
* In a mixing bowl, combine the flour, cocoa powder and baking powder
* Add the avocado mixture to the dry ingredients, and mix together
* Add the chocolate chips
* Line a brownie tray with baking parchment, or spray a mini muffin tray with cake release, then add the brownie mixture
* Bake brownies for 30-40 mins or brownie bites for 15-20mins. A toothpick should come out with just a little chocolate on it
* Cool the brownies completely before eating
* Brownies will keep in an airtight container for up to a week
