High Protein Plant-Based Brownie Recipe

Ingredients:
1 400g can Chickpeas, rinsed and drained
1/2 cup Peanut Butter
1/4 cup Cacao Powder
1/3 cup Plant Milk (plus more if necessary)
1/2 cup Coconut Sugar
1/2 tsp Baking Powder
Pinch Sea Salt
1/2 cup Dairy Free Chocolate Chips (or chopped chocolate)
Small Handful Dairy Free Chocolate Buttons (or more chocolate chips)

To serve:
Scoop of Booja Booja vanilla ice cream
Raspberries

Preheat oven to 180C

1. Blend all of the ingredients together apart from the chocolate chips and buttons. Blend until smooth and add a little more milk if necessary to blend.
2. Add about half a teaspoon of coconut oil to a baking dish or cake tin and place in the oven to melt. Once it is melted, make sure the whole dish is greased.
3. Stir in the chocolate chips to the brownie mix and pour into the dish, smoothing the top.
4. Scatter a few of the chocolate buttons (or extra chips) to the top and gently press into the mixture.
5. Bake for 20 minutes and then allow to cool for about 15-20 minutes.
6. Slice and serve with a scoop of dairy free Vanilla ice cream and raspberries.
